OK so the next question... I see the K1 visa I-129F is that the only form I need to file or is there more in that list?

there is one additional form plus the I-129f includes more than just the form itself... refer to this page for clarity:

Bear in mind that targeting a specific date for a wedding can be a little dangerous if you're aiming for a big one.

 

In our case we'd targeted a date once we had an idea how long it was going to take, but we made sure with the venue (hotel) and other suppliers that we could change the date if we gave them a month or more's notice. We deliberately booked a Sunday at the venue as these are low demand so we could not be blocking a date that would likely be in demand by other people. Most of our family were travelling either from Europe, or hundreds of miles away in US, so didn't need to be at work the next day.

 

It wasn't a massive wedding, about 40 people, but we had close friends and family from both sides, from several countries and it was much nicer than a court house quickie.

 

We had friends and family booking flights and hotels once I'd had the interview arranged (we were pretty sure nothing would go wrong), but it is a bit stressful until you have visa in hand.

So when you send in the I-129F... are you sending in the other forms or do they request those forms at a later date?... I'm looking at your timeline and I don't see the other forms listed .. Just alot of NOA1 and NOA2, NVC and some other acronyms

Technically, the 6 month visa expiration date starts ticking from the date of the medical, but if she has the medical close to interview date, shouldn't be much of an issue overall.

And when/ where does the medical take place?

Shortly before the interview. 

Visa isn't granted until the medical is completed by an approved physician.

The DS160 is the current applicable form, it replaces those others. See

You don't send the DS160 yet. You complete that prior to your interview. The process may differ a little based on your location (I interviewed in the UK in 2015, process might have changed a little since) but typically you have to undergo a medical and complete the DS160 online and then a "ready to interview" form, and at that point they schedule the interview. Some time after NOA2 your application is sent to your local US embassy, and they then send you information about next steps, including the DS160.
