Traveling to another country while I-130 is pending

I am US citizen and applied for a CR1 from a US address in May. At the end of the month I will be going to Nepal to volunteer with my wife at a children's school. Will this mess up anything in the process of our visa? Could I file the I 864 (Affidavit of support) from the US embassy in Kathmandu although she is from Argentina? If I am leaving my job (I do have a joint sponsor with sufficient income), do I need to notify the USC or anyone else? Could I check my case online or call customer service to see what forms are required in the future? 

 

I would really appreciate some advice on this subject as I would wish to live abroad with her until our visa is approved and come back to the United States together.

An IR-1/CR-1 takes like a year so I don't see how it could mess up things. Are you planning on staying there long?

 

You cannot change consulates. Once UCSIS sends the file to the consulate in Argentina, she will have to go there for the interview and the visa stamp. According to the stats on the "processing time", she should (more or less) have the interview in March 2018 (if you filed May 2017 like you have in your timeline).

 

I think the affidavit of support has to be sent to the visa center in the U.S. The consulate only appears after UCSIS finishes with their part of the process. First, you have have someone check your mail regularly in case you get something by mail from UCSIS. Second, you could leave any forms you have to submit ready to go and have someone mail them for you when it is time. I guess you could send them from Nepal but who knows if/when will they arrive; unless there is like a Fedex/DHL there.

The sections above in bold and red are not exactly correct.  USCIS never sends a file directly to an Embassy or Consulate, it always goes to the National Visa Center in New Hampshire.  For immigrant visa cases, the NVC acts as a document intake facility, once they receive and check said documents for completeness, the file then gets sent to the Embassy or consulate.
