I recently payed the AOS and IV fees for our IR-1/CR-1 case at the NVC, but as I have started working on gathering all documents required for submission I ahve realized that some docuemtns could take me quite some time. Question, is there any time limit after paying those fees to submit my case?

It really depends on the documents. You have to try to submit as much initial evidence of a bonafide relationship as you can. You may hear the term front load. If you do not submit the required documents at a minimum, you may get a request for initial evidence which can slow down or halt your application depending on who you ask. What exact type documents are you referring to? Any thing to do with identity, divorce decree, marriage certificate, passport/visa stamp ,birth certificates,  etc you have to send with the application. If something is missing you will get rfie and they will give you 87 days to respond.
