So my wife's I-94 "Admit to" date ended on the 15th of December. I'm assuming this is what we are supposed to fill out for the I-94 expiration date for the I-485? Do we need to apply for another I-94 before we file the AOS?

No, that was the date you were supposed to get married by. As long as you did you may file AOS whenever you wish. Even years from now (obviously the latter is not advisable as she wouldn't be able to work and travel in the meantime).

Use that date, you're fine. I-94 is only issued once at POE so there is no application for another I-94.

Awesome. We did get married before then. On the application it also asks for the USCIS Current Status. Would I just put "K-1 Fiance" even though we are married? Or something else? K-1 Nonimmigrant?

Use "K1 Visa Holder" for USCIS current status. The example form (I485) is very helpful for AOS from a K1.

Even though the I-94 is expired, you still just put 'K-1 visa holder' as your current status.
