So we have just sent in our petition today, and we are trying to figure out what we're going to do once it comes time for the interview. My fiance (he's the petitioner) has not met the minimum required amount in the past year for his income, and the only person that we could potentially have as a co-sponsor would only be able to show assets, not an income. I'm confused about whether these assets need to add up to 3 or 5 times the 125% above the poverty guideline? And does it need to be 125% for only two people, meaning the co-sponsor and the beneficiary? Since it's about ~$20,000 for 2 people, would $80,000 be enough? The money is from a trustfund that the co-sponsor has.

It is x5 for the cosponsor, as he is not the spouse of the beneficiary. How much money the co-sponsor needs will depend on his household size; for example if he has a wive and 2 kids, it would be his family plus the beneficiary= 5 people; if he is single then yes it would just be 2, him and the beneficiary, and he'd need just over $100'000 in easily liquidated assets.

Many places do not like a co-sponsor sponsoring on assets btw, but I don't have personal experience of the US embassy you will be going through.
