A scanned and printed copy would be fine. Keep the original safe though as you need it for the AOS.

I thought the NVC would send one to the Embassy and the Embassy would send a packard to the beneficiary which would include the NOA2 also. Am I wrong about that?

The NVC doesn't have a copy of your NOA2. That comes from the USCIS and is sent to you while the casefile is forwarded. But the NOAs are not part of a casefile. So no, neither of those are included or given to the beneficiary. If you do not have your NOA2 you can pay the USCIS to send you another one.
