The overstay has forfeited her visa. She is unlikely to get another one. If she stays here, she will be an illegal immigrant without a way of becoming legal, ever.

What will happen if she's stay here while waiting for the petition to be approve?

She will be denied adjustment of status due to overstay. Now you need to familiarize yourself with the process - petition approval isn't going to help her, she needs to wait for her priority date to be current. It will happen in about two years from filling. Look up visa bulletin.

How to Apply

Green card holder (Permanent resident)

File Form I-130. After a visa number becomes available, apply to adjust status to permanent residency using Form I-485. So According to all this info, your wife has to be in status to do adjustment of status. So if she had to leave in May, she is now out of status so you can't adjust.

Spouses of LPRs cannot adjust status unless their priority date is current.

It will take more or less 2 years before her priority date becomes current and if she wants to AOS she must have authorized stay (valid visa) in the US.

Are you due for naturalization any time soon?

What visa is your wife in? Bear in mind that overstays are not forgiven for relatives of LPRs.
