Joint stuff...how do we do this best?

Okay, guys, so AOS package (adjusting from K-1) is sent out. NOA1 is on its way.

I currently have a marriage certificate (and several certified copies), a phone bill, and a SSN in my married name.

My husband and I are living with my husband's dad in a house he (my father-in-law) owns and pays all the bills on.

He also owns the car my husband drives as my husband does not make enough money for car payments. I am most likely not allowed to even get a drivers license or state ID until I have at least my EAD card. So car payments are completely out of the question, now.

My husband still works only part-time and the school he works for refuses to promote him to full-time. Well, he's part-time on paper. He still works around 40 hours a week. Being part-time doesn't make him eligible for company health insurance (which would enable him to bring me on under his own insurance as well). Getting joint health insurance otherwise would cost us a minimum of $380 a month, which we simply cannot pay for at the moment - especially with me not being allowed to work yet and us looking into moving out as well.

So I guess my first question would be: How did you guys fare with getting joint health insurance? Is joint health insurance necessary? If yes, is it necessary at this point in time or later? How much later?

We are currently working on getting a joint bank account and will hopefully have this soon. Fingers crossed, we can move out in a timely manner and start paying for rent and utilities jointly - but will moving into an apartment once I have my EAD and first full paycheck be early enough? We need to have all of this proof by the time the interview rolls around, right? How soon after receiving your EAD can the interview be expected? Not having definite times on any of this makes things really scary.

Could anyone give me an exact list of the things they expect at the interview stage?

Me: Irish/ Swiss citizen, and now naturalised US citizen. Husband: USC; twin babies born Feb 08 in Ireland and a daughter in Feb 2010 in Arkansas who are all joint Irish/ USC. Did DCF (IR1) in 6 weeks via the Dublin, Ireland embassy and now living in Arkansas.
