One thing to consider -- if you go the K-1 route (fiancée)route, the children can come with her immediately. If she comes to the US and you marry here, you will then need to file separate petitions for the 3 children -- and it will likely be almost a year before they can enter the US to be with her again.

If she is truthful during her visitor visa application (going to the US to see her boyfriend, in part to escape an abusive situation, and it is clear that she has no strong reason to leave the US -- children are not sufficient, since parents frequently leave their minor children behind when attempting to establish a better life in the US for them -- she will most likely be denied. It would save a lot of time if you would start gathering the required documents for the K-1 now, IMHO.

It is correct that after marriage each child needs their own petition, but they can all be sent at the same time as the mother's petition if a spousal route is sought. Since it is illegal to visit the USA with the intent to immigrate, I won't even talk about it.

Since speed is of the essence with this household, K1 with the children as derivatives is the best option. Also trying to make sure the children can move (aka she has sole custody) would also be extremely beneficial.
