My wife's paystubs are technically e-stubs (online-only & never mailed). However, she also can also obtain a 1-page payroll history statement showing her paystub history (for the valid date range).
Will the USCIS accept a 1-page payroll history statement as an alternative to multiple individual paystubs? (We also have bank statements to prove each paycheck for the past 2 months).

My AOS Interview is Wednesday. Even though an I-864 was already submitted, the interview notice asks for sponsor's (wife's) paystubs for past 2 months.

You can print e-stubs individually. I printed mine. Legally they have to provide you with a paystub. It is just not a mailed hardcopy. She may need to ask payroll or Human Resources how to print them.
