Quick question, my wife and I filed form I-485 and I-130, and was wondering if the processing time we should be looking at is the one at the closest field office (I live in Gainesville, FL so it'd be Jacksonville, FL) or one of the service center?

I think you'll have to wait and see where they send your case first. You might get sent to your regional office or you could get transferred to CSC. Did you file for CR-1?
Total elapsed time between filing I-129F to GC in hand 569 days or 1 Year, 6 months, 22 days.
