I just got the letter from NVC saying that all the documents for my wife has been send to the destination embassy. Now, how long does it take to get the visa interview call after sending these documents? How long did it take in your case?

Maybe different embassys do things different but I've never heard of an embassy calling anyone for the interview appointments.

Is there any way to track or find out the possible interview dates for a certain "MDR" number?

You can call Department of State, 202 663 1225. They will be able to tell you your interview date before you receive the interview letter from your respective embassy. My guess is give it a couple of weeks after NVC tells you that your paperwork was sent to the embassy.
