For a K-1 beneficiary, when can they travel outside the US without Advance parole? Is it as soon as you apply for AOS? Is it not until you receive the green card? When exactly is it?

If you don't apply and receive AP, then you have to wait until your receive your Green Card.

You would need to wait until you have been approved for AOS and have your Greencard in hand... before you could travel outside the US...

Keep in mind that it is recommended that the beneficiary, even with the GC, doesn't not stay outside the U.S. longer than six months.
