I noticed that the Form I-864EZ expires today (10/31/07), and I am ready to submit it today or tomorrow - do you guys think this will be OK? Since I am technically sending an expired Form? I could not find newer form anwhere, I am hoping that when I send this in, they will accept it and not consider it expired, can cause all kinds of delays for me if they decide to get sticky about it...
What are your thoughts?

Per USCIS, both the 10/18/07 and the 01/15/06 edition can be used, no other edition accepted. It was just an OMB renewal without change. Therefore, you don't need to use the newest form.
