Hello People,
My wife is living here, we are married, and she has a Social security card and number but it is not valid for emplyment. We are going through the AOS process. Is she able to start at a college, and study? Can she even apply, or does she have to wait until she has a green card?

Yes you can enroll in college while waiting for AOS, the SSN that you will be handy since most colleges use that number in their records system. Contact the school's admissions department and ask.

Keep in mind id it is a state funded college you may have to pay non-resident rates.
