An update on my situation: my fiancee and I spent the last 2 weeks of August together in Japan (where I had stayed since June for a temporary job assignment) and together flew to US on September 1, entering the country via Chicago O'Hare International Airport. Immigration and customs were smooth and simple. They did not open our luggage.

On September 5 I took her to the social security office but was told to wait at least 10 days for her I-94 information to be entered into their system (I should've known better!). I understand K1 visa holders can have a SSN and can legally work until the date on I-94, correct? Also, the AOS fees include making an EAD, right?

Yet another immigration journey that I have to educate myself how to do..., but I'm glad we are now together...

While a K-1 is employment authorized, unless you received the EAD stamp on the I-94 when you came through immigration, you lack the document needed to become employed.
