I just came to New York a few months ago, and my husband and I got married shortly after my arrival.
This is the case and my question; We've filed for AOS etc. and are now waiting on an appointment for an interview, and approval on my Work permit.
While waiting, will I be able to travel to texas for a short stay, and enter back in New York without complications?

We just got back from Texas ourselves! Its no problem at all - travel within the states (or US territories) is perfectly fine.

The only reason an issue may arise is that border states can often have border patrol stops inside of US borders (I have personally been stopped driving North of San Diego), so if you go near the Texas/Mexico border, make sure you have your paperwork on you.

I have a question that is along this same topic. After the 90 marriage window passes (and getting married before it passes of course), when you travel from state to state do they ever check that visa page and question it since the visa expired? Just wondering if so and what else they ask for, from you guys who have actually been through it. Thanks for the info.

There are no checks as you travel between states of the USA. The borders between states have no guards like the borders between countries.
