I'm wondering if anyone else had their interview scheduled on the day that the I-129F actually expires. What happens if my fiance doesn't get approved on his interview date?

Consolate will extend it.
You can E Mail the Embassy and request to extend your petition and keep a copy of your E Mail. An example on how to write it is here http://www.visajourney.com/forums/index.ph...p;page=examples
Scroll down the K-1 Visa Related Forms and you will see it at the bottom.
Yes, the Consulate should extend your I-129-F, but I would recommend you E Mail them with your request just so you can have peace of mind and proof you did ask in the event it got overlooked somehow.
