Really stupid question, I know, especially since I've been in this process for so long, but how do you see if your application has been "touched"? All I see when I check the case status online is "Card Production Ordered"

Since card production has been ordered, your application is approved. It is probably not going to have any more touches.
Yepp, if it says card production ordered, you should have it in your mailbox in a few days probably.
