If I wasn't able to meet the income requirements at the time of the AOS interview could I still use a sponsor? even though I didn't need one for the initial k-1 entry visa?

Yes you can use a sponsor when doing AOS if you do not meet the income requirement...

The financial stuff from the K1 is separate from that of the AOS (different forms and everything) so using a sponsor on your AOS even if you didn't have one during the K1 is just fine.

Who is "I"?

A sponsor is a requirement for adjustment of status, and the Sponsor must be the petitioner. If the Sponsor does not have sufficient financial resources then a Joint Sponsor may be used in addition to the Sponsor.
