Oh man. This, this, and this. Not taking your shoes off is the height of rudeness in Canada. It would be like someone waltzing in and taking off their pants and heaping them on the furniture, and then scratching their balls in front of you and your guests.

Erm. Did she go to University? Up here, University and College are two entirely different things. You risk offending a university grad by implying they went to a college. You go to university to become an engineer, you go to college to become a welder. No offense to welders, of course.
My fiance has piped in "Never say Canada is the 51st State". Er, yeah.
And lastly, don't make fun of her accent. Not all Canadian use 'eh' as every second word, and it's insulting to insist as much. I know it might be hard to resist (at least it seems to be for most!)
I'm sure she'll bring you up short if you err anyway, so not to worry.
