Do they generally ask for bank statements and/or employment letters on a regular basis? Should I be prepared to show proof of finances / deposits etc?

I mean at the interview, should I be prepared to basically bring every piece of documentation I have sent so far - or is this sort of thing redundant?
I am not familiar with the I-130, but best advice is to take what makes you feel comfortable. Honestly, though they may not ask for it (I don't know if your financials are needed at the interview as you are not the USC) if you feel more comfortable carrying everything but the kitchen sink carry it. Do whatever will put you at ease. Good luck!

What are you applying for? I assume it's a CR-1, right? If so, the Consulate will let you know what to gather. As for the I-130, you need your marriage certificate, birth certificate, previous marriage/divorce certificates (for both of you), photographs, etc.
Now, the above was for Direct Consular Filing (DCF), so I am not sure what USCIS requires from folks filing from the US (I guess that's where you are).

take everything you have you never know what they are gonna ask for.
For my wife's CR-1 we took everything, including bank statements, copies of bills with both of our names on it, and our Best Buy cards with both names. I'd take everything, have it completely organized, and odds are they'll see the big envelope and not even ask. Good luck!
No, brad is already in the U.S. and filing I-130 and I-485. I-130 for an approved immigrant petition (his wife is the USC) and I-485 for adjustment of status.
Anyway, the Canadian's finances are not required at the AOS (adjustment of status) interview, only the USC sponsor. But bring everything to the interview that you submitted to them as well as updated paystubs, employer letter, tax forms, w2s, etc. for your sponsor (I'm assuming it's your wife). The only time the immigrant needs to bring proof of finances is if the immigrant is using their income or assets as part of the sponsorship.
If you don't already have a joint account or joint bills, etc., start getting her to add your name to things to show proof of common residence and relationship. You'll need it at the interview.
