How important is it for me (sponsor) to be present at the interview? What are the risks if I am not there?

Not important, in fact many consulates will only interview the benificiary, and the sponsor needs to remain outside.

YuAndDan is right. Lots of us went to the interview alone, don't you worry~.

Depends a lot on how confident the beneficiary is.
Most of the time the petitioners present will aid the beneficiary just being there even if they aren't interviewed.
I've seen guys kicking themselves in the ### after not going and being denied.
Haven't seen any doing the same for going tho. At least they are there if anything negative comes up and can "try" to do something about it.
I also imagine the COs see petitioners present as a positive as it shows more evidence of a"bonafide relationship".
If a person only made one short trip and got married or engaged I'd definitely consider attending or at least make a second trip just prior to the interview.
Standard questions is! How many times did you meet?
Great thing is if they go and everything works out and they can bring their mate home with them.
They can join the "Mile high club" on the way home also!!!

For Colombia IT IS IMPORTANT that you be there. The embassy in Bogota also briefly interviews the sponsor. Check out the Colombia club thread and you will see why it is very important that you be there. It may not be necessary, but highly recommended.

I went through the Colombia thread for information. I am trying to schedule my leave for the rest to the year. I want to go down once in Sept (before the interview). Just not sure if I wil be able to make it 2 this year plus I would like to be at home the first week they (Paola and daughter) are here.

It is not important for you to be present at the interview. So there is no risk at all.
