It's up to you if you change your name in your passport or not. Personally I won't change my name in my passport b/c my passport is still valid for another 9 years. The only thing I will have to remember when traveling internationally is to book the flight ticket in my maiden name and to take our marriage certificate with me. You can't apply for a US passport as you are not a US citizen yet.

When you are ready to update your Canadian passport, I believe you need to file for one with the forms for a "Candian living in the United States (or Bermuda). Here's a

if I remember correctly, you can't amend your Canadian passport to reflect your new married name anymore, you have to apply for an entirely new passport.
You won't get an US passport until you become a US citizen.
