I just wanna ask if the U.S. Federal
income tax return (Form 1040) and wage statements (Form W-2s) that must be submitted to NVC with the I-864EZ package should be the original/certified copies or just photocopies?

They can be photocopies - and be prepared to show originals. That said, it is much simpler to order IRS transcripts (from the IRS) and submit those (as they don't require supporting W-2's etc).

Note: the IRS Transcripts would be as close to 'certified' as you could get - otherwise everything else is a copy (even though you might have extra copies of the original W-2s as not all are used when submitting a tax return - usually).

We used photocopies.
