Salt fish was no problem. Pack it in a suitcase like anything else. For the fresh fish, we had it fried and I had taken my food saver down with me in November. We brought back two suitcases with only food. We expected problems at JFK. They would not give you a problem if it is cooked or preserved like being salted.

I was surprised that Damien loves Olive Garden. Hates the Cheesecake Factory...my favorite place. His favorite so far is the Outback...we went there Wednesday night and he ate 6 loaves of their bread....I was so embarrassed unsure.gif but he couldn't stop smiling. He always order grilled chicken everywhere we go...even at IHOP.

Guess you folks would not like to see my behavior with soca. Jamaicans like reggea and Trinidadians like soca. Being from Trinidad, it in my blood. Iffeisha does not like it either, but when we are together she gets loose because I just act crazy.

There is a spicy Jamaican jerk blackpepper chicken at cheesecake factory. he should try that when he goes back. Tell them to hold the black beans though.

It drives me nuts!!! Went out a couple of weeks ago. He ordered stake for the first time. I bout died, in disbelief when he actually ate it. So we don't usually eat out, he likes to save money. If we do we go to an all you can eat place like Hometown buffet so he can eat all the grilled chicken and fish he wants. wacko.gif

My grill came out when Iffeisha arrived in November. We were grillig even when it snowed. I told her to get accustomed because I do not cook inside during the summer. too hot here in Baltimore even with AC. I even stop baking bread when the summer comes around. Yes, I do bake bread because my wife will not eat the store bought bread. Got the recipe from my mother and added my own twist, grated coconut. When Iffeisha cut those nails, she will be making her own bread. I am working on her getting some shorter ones when these come off.

As for the snapper, to die for. My mother tells me look at the fish eyes and if they have not yet changed white then they are pretty fresh. Something to remember.


That's the same grocery store we go to. Caribbean Delight is down the street from there...Damien loves their ackee and saltfish. We don't live far from there but we only go every 4-6 months. We'll try the store in Baltimore. I don't mind the driving if it makes him happy.

We fought about the propane all last year, and lighter fluid I better not dare use it. He rather start it with wood found from God knows where wacko.gif and why buy wood chips when the is wood lying around in the back yard? helpsmilie.gif

I feel 'ya. I used to walk out of the club when they played soca too long. But my bellydancing instructor is from Barbados so I learned how to dance to it. Dancing to it is a great work out...we dance from one side of the room to the other..parade style...good cardio.

Kelly....it's called peanut porridge....not soup.....
Peanut Porridge

This is one of the most recent food craze in Jamaica.Peanut porridge is boiled on the street side and many individuals do not feel their day complete without this meal. It is said to be a good energy food and last for hours
when we went to kingston we stopped and got it....so good...

Cooking Time: 35 minutes
Serves: 4-6


INGREDIENTS:


2 tablespoons butter
2 tablespoons grated onion
1 stalk celery, thinly sliced
2 tablespoons flour
3 cups chicken broth
1/2 cup creamy peanut butter
2 tablespoons dry sherry
2 teaspoons lemon juice
1/4 teaspoon salt
2 tablespoons chopped dry roasted peanut
METHOD / DIRECTIONS:


In medium sauce pan, melt butter over medium heat.
Add onion and celery and sauté 5 minutes.
Stir in flour and mix until well blended.
Gradually stir in chicken broth. Stirring to keep mixture smooth, simmer 30 minutes.
Remove from heat and strain. Return liquid to heat and stir in peanut butter, sherry, lemon juice and salt.
Heat through and serve garnished with chopped peanuts.

I've tried to be open minded about the food. I even tasted a piece of deer meat. Yuck! But to be honest, I am worried about being in the USA and changing from my relatively healthy diet of fish, chicken and greens to all the cholesterol-laden foods and becoming over-weight and more prone to things like heart disease.

I'm sorry, but a big old slab of medium rare, blood-oozing steak on my plate with eggs for breakfast on a sunday morning is a bit too much. Jay's feelings were hurt but in the end he understood. I miss my callaloo and saltfish with plantain (and or porridge) on a sunday morning.

I have adapted to my husband's healthy style of eating. Just keep eating the same, it might be a bit expensive, but eating healthy is usually more expensive any way.

Damien gained a lot of weight his first six months here. It was hard to sit home with nothing to do but eat and watch TV. I got him hooked on fast food when he start got here...that was a terrible habit of mine. We're making healthier choices now...besides the festival and ice cream we ate last weekend blush.gif . We also go to the gym together.

I'm not a great cook so I don't attempt to cook Jamaican food. I would like him to cook more and teach me.

He won't touch any American breakfast food.

Damien gained a lot of weight his first six months here. It was hard to sit home with nothing to do but eat and watch TV. This is too funny. I am also a picky eater so once Javon arrives I know we won't have any problems. He loves everything I do...we pretty much eat the same things. However, he does love fish but I don't unless it's fried, brown stewed, or escovitch. I normally don't buy it b/c it's too expensive but my dad is vegatarin so that's ALL he eats. My mom usually spends about $200 a month and I usually go over there and take a couple grouper from myself. blush.gif

Do you guys find it a challenge when you take your hubby out to eat at a Restaurant that does not serve Caribbean food? Tell me I am not the only one who wants to pull my hair out because they canot find anything on the menu.


I don't know if anyone noticed but the beef here tastes completely different.

The only beef I eat in Jamaica is if we go out to a really good restaurant. No burgers at Burger King either.

Roy eats lamb??? Hubby will only eat chicken and fish. I am soooooooooo sick of chicken and fish is so expensive.

Roy LOVES lamb....he would eat it every meal if he could!! When he got here all he wanted (or would eat) was chicken or fish.....it took him a while to realize that it's really expensive (and hard) to get good, fresh fish.....so, mostly chicken for him now. He will eat pork and sausage (and if this counts) he LOVES Hamburger Helper wacko.gif that's the only "beef" he will eat and not complain about.



Oh my gosh it sounds like Dwain. Years ago he had me make some meals I usually eat. He is so not picky. He loves beef and pork. Good thing since my family is a bunch a farmers. We use to have pig and cattle farms. We got rid of them a year ago and just do the grains. Our family slogan use to be keep Pork on your fork. Dwain's favorite meat is pork. ahaha

When he arrives he won't care he says if he never has any Holidays off. He has never had any holidays off since he works at a resort.

If it wasn't fish I couldn't eat it. The taste was very strange.

The beef tastes different to me in JA also. So I can only imagine that it would taste different to them here in the US.

Never have and never will. I will get good beef at Tusconini's at Harmony Hall. They have great food.
Will eat it at all-inclusive resorts.

i loved it is jamaica....when coming and going to kingston we stopped at the half way point and they were selling it...SO GOOD!!!

I will make him get me some then to try it. Something new smile.gif. I thought I had tried everything.

Right now I am putting the binder together and I got new photo albums for all our pictures. My 1st photo book was so heavy with photos it is falling apart.

We are so relived now with the medical in place and today I had a IL notary sign my I-864 and his passport/drivers license photo copy for our taxes. I wish I had a scanner because I would scan our appointment letter info for our interview.

Damien didn't want to see Capleton either. The person he really wanted to see was Buju Banton but the tickets sold out so fast...we didn't get there on time. We both enjoyed Sizzla and Elephant Man concerts. He didn't get too happy about going to Richie Spice so I'm going with some friends.

Mmmmm I love cornmeal porridge yes.gif I make it at least once or twice a week (sometimes more blush.gif ) Nothing like it to warm you to the bones and keep you full all day. I am the only one who eats it though. Andre doesn’t like it so much. When he does eat it though he eats it with water crackers…he lets them get all soggy…gross blink.gif
