I seem to remember submitting info on the planned port of entry, somewhere in the mess of the paperwork. however, i cant find that again - i looked all through the papers and dont see where i put it at
anywyas - im wondering if it matters.
does anyone know?

It makes no difference whatsoever. You can use any POE you wish.

Makes no difference on which POE that you plan on entering at.
Since your visa type is CR-1/IR-1 going through JFK for temp EAD is not a consideration either since you will have a Green-Card soon after arriving into the country, The officer at any of the POEs should stamp your passport with an I-551 stamp indicating green-card.
