I heard that it can take upto 8 months to receive your new greencard once you file the I-751. Is this true? That means your conditional green card will expire long before you get your new one. What if you want to travel overseas? Will this cause any problems?

A NOA will be generated once the application for removal of conditons is received. The NOA will state that the Permanent Residence is extended one year. That is sufficient evidence for travel--many have reported carrying the letter or a copy of it as evidence of legal, permanent residence.
