I did a biometrics once during the K1 process. Am I going to have to do another for the I-751 process?

Yes, there is another biometrics for the Removal of Conditions stage of the process.

I had mine done in Seattle on October 18th, and haven't heard anything (except a "touch" on October 19th) since then.
