I wanted to make sure of a few things, are transcripts okay for the Mumbai embassy when it comes to I-134 or tax returns? and how many years back do they want...this is for a K-1 visa.

From everything I have read, tax transcripts should be ok. I process my tax returns online so only have the copies saved from the program I used. I went ahead and ordered via the telephone tax transcripts and attached these with my copies.
Packet 3 from Mumbai specifically states which tax year to send:
"Federal tax returns (form 1040) with all supporting schedules for the most recent taxable year from the date of interview. An applicant applying in May 2006 should provide a 1040 form for 2005. Failure to provide a 1040 form for the most recent taxable year could delay your application." Now I have heard of some cases where even though this was provided, they still wanted more "proof" of income and requested some previous year's returns. To play it safe, I included two copies with my fiance's copies. One copy was for the consulate if they wanted it and one for his records. But again, these are only in his file that he is taking to the interview (along with originals of cards, pictures, etc). They were not turned in at the VFS office. He just has them to be (hopefully) over-prepared.
