Do we type in the fiance's name on Question 10 of the I-134 and what do we select for question 11?

Did we submit a petition for our fiance?
The anecdotal evidence is that it makes no difference how question 11 is answered. But if we plan to provide the food, clothing, and housing necessary to keep our fiance alive, well, and happy with us, then I don't see any reason to not say so or to say that we will not.
What do you plan to do? Write it down.
