Question Guys & Gals...
I sent my Affidavit of Support in Sept to my fiance. His interview is likely going to be in December. Do you think that will be an issue? Do you think I should wait and send a more recent AOS in like late November?

The I134 is valid for one year, you are fine with it.

The I-134 is good for a year, but I remember someone posting on VJ that they were asked to get the sponsor (their fiance) to submit updated financial information at the time of the interview. So it might be good to have the most recent paystubs or bank info on hand. September to December isn't such a long gap, though.
