Even though you can't actually file anything until after the wedding, you can have everything completed and mail it off as soon as you are married. It is quite possible that neither petition would be approved by next May even if you file them the day after your wedding - so they sooner you get them out after the wedding the better

You can start filling out the I-130/I-129F for practice just to get a grasp on the forms, check the guides - they are such a great resource!! Also, I would start collecting some material that proves that the two of you have been having an ongoing relationship (emails, passport stamps, old boarding passes, phone records, pics) and if you have thrown that kind of stuff away, best to start collecting now!
