1. She will allowed to work after you're married, only if you apply for an EAD with your AOS.
2. It depends on which POE you come into the US. I believe JFK is the only POE stamping work authorization on passports. I went through Miami, and forgot to ask for my EAD (in case they gave it) but when I arrived in Pittsburgh, we had an infopass, where we asked which were the next steps, and about the work authorization that is 'supposed' to be granted with your K1. In my case, they issued the temp work permit which is only valid until your I-94 expires (90 days), though, other venezuelans in other cities tried to do this, and it was not possible for them.
3. When you file your AOS (I-485), you should also fill the Work Authorization form (I-765) and the Travel Permit (I-131). All the documentation necessary for this are included in the guidelines here in VJ).
4. Work permits are being processed supposedly between 60 and 120 days. But if you have not have a response after the 90th day your petition was received, you can request an infopass for a walk-in EAD (interim EAD).
