Hi, I'm from France, and I just got my visa, so my plan is to go to the states in November so I will receive a stamp on my visa then, a month after I'd like to go back to France for xmas for 3 weeks, then re-enter to the states. Will my stamp on my visa would allow this kinda travel. Or once I get in the states I have to wait a certain amount of time before leaving the country?

as far as I know this is not possible. You can only go back after you have your AP. You have to apply for the advance parol after you get married in the US together withe the EAD and AOS documents.
You can see if someone else disagrees.

Actually I got a CR1 Visa, so I'm ready to go, I'm already married in France, so my question is can I still do my plan of traveling with this kinda visa not a K1 visa.

You certainly can!
The I-551 stamp you get in your passport when you enter the States is as good as your Greencard... it allows you to work and travel.... you do not need anything other than your passport with that stamp and you are free to travel when ever you want...

You can go whenever you want as long as you dont stay for over 6 months,,sure you canleave america,,,dont worry

Not someone holding a CR/IR immigrant visa. Once that person enters the US, they become a Permanent Resident.
Permanent Residents do not need Advance Parole to travel.

Correct. I entered using CR1 in February, stayed for 3 weeks in US, and went back to home country to quit the job, etc. I moved for good in July & no problem with the entry.

your visa with the stamp will work as a temporary green card for one year or until the real one arrives. It says so on the visa if you take a look on the bottom.
CR1 of course doesn't need AP. You are free to leave and return as you please, you only have to make sure you are not out of the country for longer than 364 days a year. That's what I was told at the consulate and have it in writing.
So you are definitely good to go!!
