My fiance will recieve "package 3" in a couple of weeks. Is there anyone who's gone through the K-1 process in Japan that would know how long the wait is for an interview after she gets the paperwork?

Once everything was assembled (police record, medical forms, birth certificate, affidavit for support etc..), my fiancee mailed in the form requesting an interview date and they scheduled the date 2 weeks later.
If you have not done so already I recommend filling out the i-134 affidavit for support and the Request to Extend Approval of I-129f (both available in the example forms area) as soon as possible and sending it to your fiancee. She'll need these forms for the interview and the sooner you get them to your fiancee the better.

Why does he need to apply for an extention? Approval is good for 12 months. Unless, we don't think OP's fiancee's interview date won't happen within the next 12 months, or won't be approved for a K-1 Visa at the interview and has to go throu more delays which could pass the 12 months expiration?

A minimum of 2 weeks from the time the embassy is satisfied they have all your documents that they require. It takes that long for the embassy to get results from the security name check. I asked for my fiance's interview (Tokyo) to be set 3 weeks after I new they had all documents they had requested and they gave it to me !
BTW, you don't need to to file an extension of your I129F until until you're much closer to the petition expiring.
