When I submit my affadavit of support, which 3 years tax returns do I include? My sponsor sent me 2002, 2003, and 2004. Thanks for any help

Also, at what point do they need the affadavit of support? During the interview or before it? Thank you for your help I am still learning about the process.

Depends on the embassy... some ask for the 3 last ones (2003, 2004 and 2005).. others just for the last one (2005).
It is required just during the interview.
