Once the k-1 is approved and my fiance moves to the states, and we are married, would school loans/grants/etc be considered government assistance (like food stamps, etc)? or would that be more like a private loan? (The college I attend is a state funded public college -- SUNY school.) We just don't want our sponsor getting stuck paying for anything.. even school costs.

School related loans, etc. are a separate issue and will not affect your sponsor.

There are a number of I-864 information pages on the USCIS web site, some of them identify what programs and types of programs are classied as means-tested benefits for the purpose of I-864. The form instructions themselves may contain some guidance on this.

I was attending a Public university when I sponsored my ex-wife on a K1.

I am not receiving VA benefits now that I am sponsoring my wife on a CR1.

Also since green card holders can apply for financial aid for college then public college cannot be considered as gov assistance.
