Only requirement is that You have personally met whithin the past 2 years. As long as You have pictures of the 2 of You together plane tickets and so forth You will be fine.

At the USCIS level, it is not a problem as long as you're able to show proof... However, Consulate scrunity depends on what country the interview will be held in.

Meeting only once in the past two years is all that's required. For now, my suggestion to you would be to gather information of an 'ongoing relationhip' for your upcoming interview.
I wish you well ...

I echo what all the others said. Just build your relationship. Keep up with emails, phone bills, etc. I even submitted a couple of the phone cards without the logs.

I had only met my fience at the the time (now husband) one time in person for about 2 weeks when we had our interview. We had lots of additional information (proof from when I was there- ticket, picures, letters from family I met, hotel receipts, etc.) and proof of ongoing relationship. It was fine. Good luck.
