Is it necessary to bring originals of the documents (proof of phone, email, hotels, etc) for the fiancee to have at the interview or can I just take copies with me when I go over and let her take those? I know she can give them copies but do I really need to have originals handy if they want to see them? My understanding is they don't look at most of the stuff anyway and I hate to bring two of everything.

You can bring copies of those documents not necessarily originals..

I just don't want to lug the originals but just the copies she will take to the interview.

They don't require the originals for those documents. However, the embassy requires to see the original notarized affidavit of support, your fiancee's birth certificate and police clearance. At least that's how it works at the Philippine embassy. But I think the same requirements still holds true...Goodluck!

They normally will not ask to see the original for such a document but you never know what they might want to see. If it were my recommendation I would say bring the originals just to make sure. It is always better safe than sorry.
