For K3/K1 visa, you need to submit documentation to the nearest VFS office. What do you do if the VFS office is not close to the city where you live? Can you just take the documentation and submit it during the interview or do you have to make a trip to the nearest VFS office and submit the documentation?

You can take all the docs to the inteview and not submit them to the VFS. However you will need to submit the VFS fee whether or not you submit docs (if you don't, the interview is cancelled). Also the Consulate will take some time to go through the docs during and after the interview so you might not get a decision right after the interview...
