Just thought I'd update my timeline:

-06/21 sent off I-751 package to VSC
-06/23 package received at VSC
-06/26 check cashed (I've never been so happy to see money is missing from our account lol)
Waiting and praying for a quick NOA 1 and biometrics appointment!!!!!

Ha ha, I know exactly what you mean about being happy to see that money go from the account

Sure your NOA1 will turn up in about a week's time.
