We're both already spazzed out about how long this process will take...when i mentioned that his idea would only make things take a lot longer, he dropped his idea immediately.

I would be very careful about changing addresses if you want to avoid delays. I changed my address after filing an I-129F on behalf of my fiance, and it delayed us by a month. According to a USCIS officer the file was taken out of the queue and reinserted back in as of the date of the address change. Don't know if that applies for the person being sponsored, but it certainly applied for the sponsor.
On the broader scale I also think that having to wait 6 months or so is insignificant in a serious relationship. There are people on the board who have waited two years or more...
