Does the approval notice you get in your email saying "an approval notice has been mailed to you" means the EAD card has been mailed ? (biometrics are already done, by the way)

No, it means that an I-797 (or I-797C) Notice of Action, of type Approval Notice, has been sent to you.
The card may have been made and sent as well, but this e-mail does not address that.
