Does VFS give a recepit indicating each documents received? or is it better that we carry orginal documents directly to interview/consulate? Which is best as per your experiences?

Yes they check off on a receipt what you gave. They will want some original documents; others you can just give copies. But don't worry, they return the original paperwork at the interview (like birth certificate, etc.).
