My check was cashed last week, so I have been expecting some mail from USCIS. Is it typical that the priority date box is left blank?

Congrats Delicia! Yes, it is normal for the priority date box to be blank on the NOA1 - it will be filled in on the NOA2. For instance on our NOA2 the priority date is one day before the receipt date.
