I added my husband to my life and health insurance, bank account, lease and cc before he came and sent copies for his interview, so it is possible.

You can do some of the joint items before the interview and yes it is important to do so for AOS.

I also added my husband to my lease, renter's insurance, the cable bill and my auto insurance. You can use pictures, emails, chats, phone bills, etc for the other proof. We are also filing our taxes together, which you can do if you request an ITIN and request to be treated as U.S. residents for tax purposes.
