ok we are most likely going to have pizza tonight but I am going to cheat with the dough.. I was at the 99 cent only store.. (I

Well, we had homemade pizza last night:-). Tonight Joe cooked. He made a pot of pinto beans with ham and jalopenos (one of his favourites - he makes it often) and then pan-fried corn-cakes - like pancakes but made from corn flour - also with jalopenos. Pretty good, actually. And yes, I have to clean up the kitchen again, hehehe.

mm the pizza was sooo good

I sauteed some onion, fried up the sausage and chopped up some bell pepper and then put this yummy organic tomato sauce I found at the dollar store on the gorditas and then the rest of the toppings and cheese.. hubby even suggested barbecuing them which he did... oh my there were yummy!!!

Yum, that does sound good:-). Ours was more vegetarian - tomato sauce then fresh chopped tomatoes, chopped vidalia onions, sweet peppers, some chopped hot peppers, mushrooms, canned green chillies, a few pieces of sausage (didn't have much left), lots of Italian herbs and smothered in mozzarella cheese. Hehehe we had the left overs as an after dinner snack tonight!

Now I'm craving pizza. Those sound so good.
We went shopping in Sanford so ended up eating at Pollo Tropical. I had Caribbean Fajitas and he had a chicken and rib and shrimp combo. Tonight I have a fresh chicken I'm going to roast with lemon and herbs, and will serve with broccoli and carrots and roasted potatoes.

We ordered swiss chalet again, too tired to cook, I, again, had the grilled chicken caesar salad, it was very good.
I took steaks out yesterday, hopefully will get around to cooking them today, I have some bean sprouts that my Husband picked up from the Chinese supermarket the day before yesterday that I want to cook (they are always the freshest).

I actually bought a 10q pot and collander yesterday ( I have barely any kitchen implements as i left them all behind in Canada) with the intent of making beef stroganoff last night, but forgot the sour cream and my single fry pan isn't large enough to fry 1lb of hamburger. So, tonight perhaps, I can make it.

hubby is barbecuing chicken tonight
we found this recipe for wet rub kind of thing.. bit of margarine, lemon juice and spices... and then I made these carrots packets with bell pepper and onion and spices...
and I also made a packet of Spanish rice...

We ate brunch out ... hubby had traditional eggs benedict and I had eggs benedict with steak instead of canadian bacon. Yummy! We were so full that we didn't want to have a big dinner, so hubby made ramen noodles for himself and I made egg noodles with butter and parmesan cheese ..... and then thought, oh crap, the baby needs more nutrition than that, so I had raw carrots and an apple too

Roast chicken dinner was yum last night. I noticed the rest of the broccoli didn't have much time left so I made a broccoli cheddar soup with it for dinner this evening. We'll have that with a nice artisan bread.

We were out and about on Saturday, so took in lunch at the Trailhead in St. Charles. We had a bowl of smoked brisket chili...mmmmmmm...and a veggie pizza. Was very good. Nothing for supper that night. Last night we had an egg noodle veggie, ham, casserole with some cornbread. Was leftover ham from Easter. Leftovers tonight!

These would be good with soup Crikey!
6 bacon strips, diced
1/2 cup butter, softened
2 tablespoons sugar
1 egg
1/2 cup sour cream
1/2 cup milk
2 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup crumbled feta cheese
1/4 cup finely chopped onion
1 package frozen chopped spinach, or throw some fresh spinach in
- cook bacon until crisp
- in small mixing bowl, cream the butter and sugar until light and fluffy; beat in egg
- combine sour cream and milk. Combine flour, baking powder, baking soda and salt; add to creamed mixutre alternately with the sour cream mixture until just moistened.
- fold in bacon, feta, onion and 1/2 cup spinach
- fill greased or paper lined muffin cups 3/4 full
- Bake at 375 for 18-22 minutes, or until toothpick comes out clean
- Cool for 5 min.
- Serve warm, makes about 1 dozen

Mmm. Interesting. I'll give them a go. I'm always looking for easy breffrus ideas for when there's a large crowd. Might be interesting to switch up the flour to cornmeal. I'll experiment after I've tried the original recipe first, though. I'm no dummy. LOL

that is how I do it

Once in a blue moon, I get adventurous and make my own sauce, but usually I go for the jar sauce and additional items combo

Dinner tonight was "Cajun" sauced fish (from the frozen food section in the grocery store, hehehe), boiled baby potatoes, spinach and Joe's spiced coffee. We add cardamom and cloves to the grinder with the coffee beans - it makes wonderful coffee!

Last nights supper was very nice. The bacon/spinach muffins I thought were tasty too. Might be nice for breakfast, although I can't eat right now, still too early! The fish was delicious. I love my George Foreman Grill.
I might make zuchhinni sausage squares tonight. I have some young yellow squash as well, so might make a zuchinni squash square instead!

Sounds yummier then what I'm making. I need to eat more spinach though. I'm probably making me my cajun octopus over wild rice, though I'm really low on octopus and the oriental store I get them at is kind of far away. Wife is getting garlic lemon salmon with wild rice I think...

Mmmm. Yum. Sounds like you live in an area like I do.... have to drive miles to get your ingredients. I wish I could find some good ethnic stores in the area. There are a ton of Mexican grocers, but I don't like Mexican food so I don't need those ingredients.

I really do need to win the lottery so I can open my own market.

I am getting home late tonight so hubby will probably eat junk food and be in heaven. I think I will have leftover spaghetti from last night.
My little burst of cooking energy and inspiration has again faded. Now all I want to do is get into bed as soon as I get home from work and veg!!!

dang, having hubby working part time has totally screwed up my schedule...
now I have to make dinner for lunch and lunch for dinner ...lol
today for dinner/lunch we had steamed rice some yummy frozen Van De Kamp beer-battered fish sticks and homemade tartar sauce and some corn... it was pretty good
for lunch/dinner we will probably have some canned soup and sandwiches or something...

I'm going to have quinoa with steamed vegies. Like always. Then for dessert a baked sweet potato. Yes, I eat boringly when I cook at home. When I dine out it all balances out.
Cooking for one is quite boring!

I had to google quinoa. I had no idea what that was. Basically, it sounds like a grain?

Yes, it's a grain. A "staple" if you may. Like rice! It's better than any white rice and better than brown rice I believe. I started eating it daily since my detox. Still crave processed carbs but really, breads and pastas are $hit on your system. So I make a bunch of quinoa and keep them in a Tupperware in the fridge and dole out a cup for dinner every night. Sometimes I'm a keener and have it for lunch, too. Eat it just like you would eat rice: with vegies, with sauces drizzled over it, or mix it in salads and throw in some coldwater shrimp and pour in some lime vinaigrette dressing.

I did the detox February 1st-7th. I did the recleanse.com detox, and it was the best thing I could have ever done for myself.
I'll start a thread on Detox so we don't clog up this thread.

I was in the store the other day and standing by the seafood department and DROOLING while looking at scallops that were the size of my fist!

Gene and I really like them, I could eat them several times a week...but I ended up getting the salmon fillets instead. Can't remember the price now, but that's always a deterrent to eating them 2-3 days a week.
Might get some for the weekend though!

The bay scallops are good. I like to use them in my seafood chowder. They're also good in a fettuccini marinara. Mushroom chicken and green beans sounds yummy. *rethinks dinner menu*
