OOO still stuffed from lunch! We went out to an Indian Buffet that has absolutely excellent Indian food and I don't even want to think about dinner yet. Maybe will heat up some soup with toast later on . . . much later on! (VBG)

OH MY GOODNESS!!!!! I just made the Donair Sauce recipe from Recipezaar....hooooo weeeee!!!!!!! It sure is some good! We're having garlic sticks, ravioli (frozen ravs with skettie sauce) and the donair sauce. I'm about to bust...it smells sooooooo good!

i love recipezaar... I don't think I have gotten a bad recipe yet.... I like to use recipes from there though that have good reviews...

We had pizza from the safeway deli and salad last night. It wasn't good actually - Sobey's is much better. I should have made the stir fry but I wasn't in the mood.

Warming up the ravioli and garlic sticks from last night for lunch today. I haven't a clue for tonight...I suppose I could do chicken. Gonna go look for recipes for chicken marinades. I don't think I could stomach just plain baked (or fried) chicken.

We're having baked ziti tonight. For some bizarre reason, hubby has stopped liking to eat veggies in the past month or so (he used to eat veggies a lot) ... so I am on a kick to "sneak" some into whatever we eat. Today, I added spinach, onions, red and green peppers, black olives, zucchini and mushrooms to the ziti, along with tomato sauce, mozzarella, parmesan and ricotta cheeses, and ground beef. Mix it all up and bake it topped with more parmesan and mozzarella. YUM!!! Normally, I add sausage too, but I have not been able to find any sausage that does not have nitrates in it (silly pregnancy rules to avoid nitrates

) so no sausage this time.

Well, we had the naked chicken...ummm ugly naked chicken on Friday night. I rarely post on the weekend, sorry! It was very good Marilyn. I read after I had made it that you mentioned the sauce was quite runny, and that you usually serve it with rice. I should have read that before I made it!

The sauce was too runny for me. I'm wondering if you can't bake it in the sauce for the whole time instead of just the last 10 minutes. The chicken was really moist though! I have some left overs, so I'm going to have that tonight, and I'm going to put some cornstarch in the sauce!
I didn't injure myself.

And because it's in the oven, it didn't splatter. Now...that' enough information to keep you guessing eh?
I served it with a potatoe vegetable medly, and I agree, it's probably better with rice.
Thanks Marilyn! I will definitely make this again. So, in saying that...tonights dinner is leftovers!

yeah, my hubby likes the runny sauce over his rice..... but you could totally add cornstarch after to thicken it up...
I usually add the sauce mixture after about 20 minutes of cooking the chicken by itself.....
but according to the recipe it says to add the sauce in the last 20 minutes...

It's experimental Monday yay. So tonight I'm attempting Sweedish Meatballs. So for some reason this doesn't look like a recipe I can screw up, but we'll see. Oh and this week I too will be making some yummy clam fetuccini with sherry...

i have even made this recipe in the crock pot... I just browned the chicken a little, with the garlic and salt and pepper and then, mixed the sauce and did the microwave thing and then threw it all into the crock pot....

Asian Chicken Stir Fry Recipe
Ingredients:
1 tablespoon vegetable oil
1 pound boneless chicken breasts, cut into strips
1 can Golden Mushroom soup (I just use regular mushroom soup or you could use cream of chicken soup)
1 to 2 tablespoons soy sauce
1 teaspoon garlic powder
1 (16 oz. bag.) frozen stir-fry vegetable combination, thawed (you could use any combo of vegies even fresh)
hot cooked rice
Heat oil in skillet. Add chicken and stir-fry until browned.
Add soup, soy and garlic. Heat to a boil. Add vegetables, and cook until tender-crisp. Serve over rice.

^^ basically what we had last night - sans the Mushroom soup (I don't eat mushrooms). I normally stir fry beef with green peppers, onion, celery, pineapple and sometimes i throw a tomato in there.
Lots of (low sodium) soy sauce, some worcheshire sauce, a couple of teaspoons of brown sugar some garlic - then just some white rice - I really like jasmine personally. I actually marinated the meat for several hours in the sauces, it was good. I also generally use sesame oil to cook stir fry in.
Tonight I have decided on Jane's chicken nuggets and - something, potatoes probably, not in the mood for cooking.

Joel grilled steak that has marinated for two days in a French dressing/soy sauce marinade. Oh baby was it good! Had a really good twangy taste to it and it was tender. He loves to cook - I don't argue one bit! - so he made green peas, kraft dinner, and baked potatoes. *sigh* How did I get so lucky!

Oooh Karen, the marinade sounds really good. I have never thought of using French dressing and soy sauce for a marinade. What were the amounts he used? I might convince hubby to dig out the grill this weekend

We had baked ziti again. Honestly, we will probably be eating that ALL WEEK since I made 2 huge pans (okay, I got a bit carried away!!!)

We had the leftover ugly chicken last night cubed up and put in a stir fry with asian noodles. I thickened up the sauce with cornstarch, and it was excellent!
Don't know what I'm going to do tonight. I have a beef tenderloin that Gene grilled up on Sunday. It was melt-in-your-mouth good. I don't want another stir fry, so I'll have to think of what to have it in.
Please post the marinate recipe (or if you were experimenting hehe) what the approximate measurements were Karen...thanks!

hey -did you try Whole Foods Market or Trader Joes? I know for sure that Whole Foods has nitrate free sausages and lunch meats i think too.

Thanks for the tip. Unfortunately, Northern New Hampshire does not have a lot of grocery store options (let's just say, evil Shaw's has a monopoly around here). I may try to find a Trader Joes or Whole Foods when I head to CT to visit family. I would KILL for sausage right about now!!!

HEY all you Wonder-Full VJers.
I have a challenge.Thinking of food, nutrition, etc etc and talking a lot about it of late with my sweetie, he asked me what I know about cleanses.
Well, it so happens I know a lot.
Hee, hee.
I just have never done one.
Ha!
So I am attempting to gather the courage and strength to do a water/lemon/maple-syrup/cayenne cleanse, aka fast.
Ten days....I shudder to think of it.
(Be brave little one...)
Maybe I will try a full day, eat for a few days and then go again.
And in the near future maybe I will be able to do ten consecutive days.

you don't have to use cream of mushroom... you could use cream of chicken or even cream of celery or maybe cream of broccoli or any kind of cream soup....
it turned out good last night.. I did have to add about half a can of water to it though....

Sorry to hijack the thread, but don't do it Spirit! Those types of cleanses don't do much for you but give you the runs! After working in the health and supplement industry for awhile it's my experience that the best cleanses are ones that don't severly restrict your eating habits or have laxatives. That's not to say that we shouldn't cut out junk food, alcohol, or caffeine, that's a must for a cleanse, but otherwise, food should be allowed. I'm not trying to advertise, but a product I would suggest is from Truestar. Try googling it and read a bit more. If you've got any questions I'd be happy to answer them! PM me!

heres a couple recipes I cant wait to try this spring and we start craving Timmies Ice Capps....havent tried either recipe yet...
COPYCAT TIM HORTONS' ICED CAPPUCCINO RECIPE
4 cups milk
1 cup non-dairy coffee creamer (Tim's uses 18% cream!)
2 tsp. vanilla
2 Tbsp. instant coffee
3 Tbsp. hot chocolate mix
1/4 cup cold milk
Heat the 4 cups of milk to boiling; remove from heat.
Add creamer, vanilla, instant coffee and hot chocolate mix; stir well. Pour mixture into a container with a lid; put into freezer and freeze until very firm, but slightly slushy.
Put mixture in a food processor; while processing, add the 1/4 cup milk in small increments to mixture. Process until all is combined and nicely slushy.
The recipe is "supposed" to make 6 to 8 servings, but we won't tell if it just amounts to one giant serving.
COPYCAT TIM HORTONS' ICED CAPPUCCINO RECIPE #2
can be made with regular coffee or decaf:
2 oz. boiling water
2 tablespoons instant coffee
2 heaping tablespoons sugar (or sugar substitute Equal)
4-6 ice cubes
1/3 cup 15% cream. (or chocolate milk...or regular milk)
Mix first 3 ingredients together to make a syrup, put into blender. Add ice cubes and blend until slushy. Add cream and blend until frothy.

keeping this recipe to make sometime..looks good Marilyn..I love to make stir fry's...I made BLT's earlier but because my husband leaves for work at 230... I get a little hungry later at night.. so I had some veggies that needed to be used ASAP..so threw together a stir fry tonight.. I usually do the same ol kind because we love it..
bean sprouts, mushrooms, red and yellow onions, green and red bell peppers, spinach, shredded cabbage, celery, soy sauce, lots of black pepper, about half a can of those fried onions (makes it extra yummy)... and sometimes I will make a package of ramen noodles and mix it in for more of a low mein flavor... love the way the house smells when making stir fry..

mmm, dinner was yummy... pulled pork and potato wedges.. yum yum..
for the wedges I just peel the taters and cut them into quarters .. then I mix together some Parmesan cheese, salt, pepper, garlic powder, paprika, and chili powder and then I throw it in a ziploc bag with some oil and then toss in the potatoes and shake it all together until the taters are coated and then you bake it in the oven....

Especially cream of wheat. I haven't done that in ages...mainly because Gene wouldn't like it....but I do have it for lunch sometimes.
I made oven burritos last night and omg were they delicious! I used that left over tenderloin we had. Two left over today, so Gene and I both have lunch. I'm going to go for something light tonight. I just don't know what!
I did make a gingerbread cake the other day. We've had a few pieces with whipped cream....mmmmmmmmmm Better to eat it the day after you make it, much more moist!

I'd say if the only problem with them was too much pepper, then you did alright!

Don't go for boring...you seem to be experimenting and that's the best way of finding new ways to serve things!

I had no supper last night because a neighbour and I went to lunch! We had Gyros and they were absolutely fabulous. Messy, good..mmmmmmm (I almost dreamt about them last night!). Anyway, I was stuffed, so I made Gene a salad and grilled cheese salad. He's been a bit under the weather the last week. Actually today he's home sick! Don't know that we're going to have anything other than soup tonight...maybe I'll make a nice brocolli soup for supper.

Tonight I am making a recipe I saw on Paula Deen a few days ago. Zesty grilled tilapia with coconut rice. I'm gonna make some mango salsa and steam some artichokes to go with it.

That's something I need to try is steamed artichokes. We both like them and it would be a change from the normal veggies we have. So now the question is how do you prepare the artichoke? I have only ever had them on pizza...

When I cook artichokes, I steam them in a pot with a little water, I also add a little olive oil and garlic powder. As for cooking time, I honestly don't know ... I just check them until they are done (I check the leaves and see how they are).

last night we had barbequed hotdogs...
tonight we are having sgetti... of course I cheat and use a jarred sauce but it is a yummy sauce... I just fry up some ground beef and onions and bell peppers if I have them and then add the sauce....

Pork chops tonight! Potatoes and salad too I think.
Last night we had soup, mixed cream of chicken with cream of asparagus woo hoooo! (It was very good).
Then just some bread with that.

Just made this tonight...YUM! Made it with a big side of salad...
Curried Tilapia with Mango Salsa
INGREDIENTS
1 mango - peeled and diced
1/4 cup chopped red onion
1 serrano chile, minced
1/2 cup cilantro leaves, chopped
2 tablespoons lime juice
1/2 teaspoon salt
2 tablespoons olive oil, divided
1 tablespoon curry powder
1 tablespoon garlic pepper seasoning
4 fresh tilapia fillets
DIRECTIONS
For the mango salsa, combine the mango, red onion, serrano chile, cilantro, lime juice and salt in a glass bowl. Set aside.
For the tilapia rub, mix together 1 tablespoon of olive oil, curry powder and garlic pepper in a small bowl. Rub this mixture onto both sides of the fish fillets.
Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Cook the fish for about 3 minutes on each side or until it flakes easily with a fork.
Serve with the mango salsa.
