Last night we went to Panera Bread. I had soup, he had soup and salad. We had originally planned to have Indian but late yesterday I felt like I got hit by a ton of bricks. Lay down for a quick nap and woke up with a terrible headache and very nauseated and shivering. I think I'm doing better now. I hope.

Speaking of dinner! I was going to make a stir fry tonight, but the folks at my Husband's workplace want to take him out for a drink after work. He doesn't want to go, so that should be fun for him.

Based on that I have decided to make a roast instead - easier to keep warm. So roast, potatoes and I think hmm, maybe corn, maybe not even potatoes as i'm thinking garlic bread sounds good.

I'm making chicken fried rice because it's ALL I have ingredients for.

I need to go grocery shopping in a HUGE way.

OK, I am hereby fessing up... I made Bren's fave blueberry muffins last night, and I forgot to put sugar on them. I hang my head in shame.
one_day_at_a_time
I go back to Canada one weekend a month (usually the 2nd weekend, Fri-Mon) and on the Thursday before I make up a batch of Chili Mac for our dinner and leftovers for another meal to feed my husband over the weekend.

Recipe:
Saute 1/2 green pepper (chopped), 1 small onion (chopped) and 1 large clove garlic (diced)
Add 1 lb ground beef, brown and drain
Stir in 14oz can diced tomatoes, 1 tbsp mince jalapenos, 1-1/2c spag sauce, 3/4c water, 3/4c uncooked elbow macaroni, 1 pkg (or 7-1/2 tsp) taco seasoning & 1 can mexican salsa
Bring to a boil, reduce heat and simmer 10-15 minutes
Top with grated cheese

Tasty!

not sure what is for dinner tonight.... it is our anniversary but hubby has school this evening from 7 to 10pm...

he called in sick today too and is upstairs snoozing away....

I think we might go out for a nice dinner tomorrow... but now that he is home today I am not sure what is going to happen...

Lady at work gave me a recipe for Sweedish Meatballs, but don't have the stuff for that yet. So instead I have chicken dethawing so will be having I guess Mustard Chicken and Brocolli. Pretty plain and simple to make. Fry Extra virgin olive oil, dump in chicken with mustard powder and mustard seads and mustard crap from the grocery store, fry and then serve...

hmmm maybe you could put some sugared strawberries and whip cream on them, or use them in a bread pudding style recipe or make a nice cream cheese frosting for them..

Gosh. I haven't had boiled potatoes in forever. That sounds good. Sure wish I wasn't so nauseated. sad.gif I'd love to be able to go out to eat. My husband's gone out with his business associates. I feel too crappy.

I'm cookin' up some chicken breast spiced with merken (a Chilean spice blend) and panfrying mushrooms and brussel sprouts with garlic, sea salt and olive oil. It's the first time I'm trying this out, but I'm thinking it's going to be deee-lish biggrin.gif

we had some yummy sandwiches and pasta salad from the awesome deli down the street... the deli has been there since the 1950's...

sometime on the weekend we are going to go out for a nice dinner for our anniversary... maybe TGI Fridays or something.... or maybe a Italian restaurant...

Two muffins from Tim's and a cafe mocha. (not so much on the nutritional side, but very tasty) Ahhh, it's good to visit my hubby in Canada!

Beef-Noodle Skillet

INGREDIENTS

* 1 pound lean ground beef
* 1 small onion, chopped
* 1 teaspoon minced garlic
* 1 (10 ounce) box frozen corn kernels
* 1 cup mild picante sauce
* 1 (15 ounce) can tomato sauce
* 1 cup water
* 2 cups medium egg noodles
* 1/4 cup shredded Cheddar cheese

DIRECTIONS

1. Break the ground beef into chunks in a large skillet over medium heat. Add onion and cook, stirring to crumble the beef, until no longer pink.
2. Drain off the grease and stir in garlic, corn, picante sauce, tomato sauce and water. Add the noodles and bring to a boil. Simmer, uncovered, over medium heat until noodles are tender, 10 to 15 minutes. Sprinkle cheese over the top. Allow cheese to melt for a minute before serving.

Cajun Style Baked Sweet Potato


INGREDIENTS

* 1 1/2 teaspoons paprika
* 1 teaspoon brown sugar
* 1/4 teaspoon black pepper
* 1/4 teaspoon onion powder
* 1/4 teaspoon dried thyme
* 1/4 teaspoon dried rosemary
* 1/4 teaspoon garlic powder
* 1/8 teaspoon cayenne pepper
* 2 large sweet potatoes
* 1 1/2 teaspoons olive oil

DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C).
2. In a small bowl, stir together paprika, brown sugar, black pepper, onion powder, thyme, rosemary, garlic powder, and cayenne pepper.
3. Slice the sweet potatoes in half lengthwise. Brush each half with olive oil. Rub the seasoning mix over the cut surface of each half. Place sweet potatoes on a baking sheet, or in a shallow pan.
4. Bake in preheated oven until tender, or about 1 hour.

Yes overpowering Djion mustard which was so strong it felt like we didn't have chicken or brocolli, but instead just took heaping spoonfull of this mustard and jammed it into our mouths.

Just hasn't been a great experimental cooking 2 weeks. I should just stick with what I know ha ha...

Don't stick with what you know, Warlord! It's all these failures that teach you how to be a good cook. I made some amazingly bad meals when I was learning. They're really good for a laugh.

That looks good to meeeeee. I'm hungry! So, Husband goes grocery shopping on Tuesday night. I asked him to get some garlic bread, or bread for me to make garlic bread. Well the bread didn't show up and I meant to ask him about it then forgot. Yesterday morning he goes to the garage and brings up a loaf of french bread - he had left it in the trunk.

Soooo I try some later in the day, seems just dandy to me and does not taste like garage lol

I cut the bread in half, garlic/butter, wrap it up in tin foil - and throw one in the freezer in tin foil/glad wrap.

Then I am laying in bed last night thinking, hmmm we didn't have garlic bread, wonder where that got to. Anyway we have lots o garlic bread in the freezer now. Oh and the roast was great - with potatoes and asparagus.

The chicken fricassee was good!! And so easy. Being done in the crock pot, the chicken was so tender.

This is the recipe as my mother in law gave it: I couldn't find the picsweet seasoning so I improvised and bought a package of some chicken crock pot seasoning. The recipe also calls for Pioneer brand package gravy- if you can't find that then McKormicks or any other brand of package gravy would be fine.

4-6 boneless, skinless chicken breasts
1 package brown gravy mix
1 can Campbell's creamy chicken mushroom soup
1 package picsweet seasoning (any flavor)
3 tbsp (or more if you like really dark gravy) kitchen bouquet
Tony Chachere's seasoning to taste (or any other seasoning you like if you don't have this.

Mix gravy with 2 cups hot water. Add soup, kitchen bouquet and other seasonings and mix. Add chicken and mix into crock pot and cook all day.

I served it with rice and veggies.

I hope you enjoy the naked chicken... I would suggest not cooking it naked though ...lol

the sauce is good over rice and for dunking the chicken in while you eat.... good.gif

it is a runny sauce but my hubby liked it like that...

Well tonight, pork chops - glazed in something - corn on the cob and garlic bread.

I always find it weird on these cooking shows that these people handle meat then stick their hand in a bowl of salt or zip up the freezer bag they are putting it in for marinating, without washing their hands.

Carla - Oh yeah, fair/amusement park food is great once in a while! Hubby would eat it more often if he could smile.gif We also have been taking advantage of fast food restaurants that we used to eat it when I lived in GA, but are not anywhere near where we live now .... so far, we have eaten at Sonic, Chick Fil-A, and Krystal's (hubby's all time favorite!!!).

I love the recipes I have seen posted here ... can't wait to try some of them smile.gif

Tonight, my mom and I made cabbage rolls, but they are STILL cooking so we just had tomato sandwiches for dinner (fresh tomatoes with parsley, oregano, pepper and garlic powder seasoning them, on toasted white bread with mayo.

Not sure what we're having...we ordered a pizza last night from Papa John's. Darn good pizza!

Let's see now, I do have chicken and hamburger patties, as well as hotdogs. I *could* marinate the chicken and oven bake with BBQ sauce. I could make salisbury steak with the hamburger patties. Oh wait...I also have some thin sliced steak...I *could* do something with that. I have lots of spices and such as well. Hmmm, now that I looked up that recipe for Donair sauce that Cassie sent me (thank you again!) I might try my hand at making donairs. And garlic sticks. And potatoes...tossed in olive oil and ranch dressing mix. Or onion soup mix. Gotta go find some veggies, we're out. Green bean casserole? That sounds good. I have everything for it, 'cept the green beans. Mayo popovers with cheddar cheese baked in it kinda like cheddar cheese biscuits. Rice...what to do with rice...noodles...hmmm....

My pork chops were once again glazed in ze bbq sauce. Need to use up the food stuffs/condiments we have here! I rarely use bbq sauce, although I love it. The corn on the cob last night was delicious!

Took out some round rouladen the day before yesterday (thin sliced round beef) - so will probably stir fry. I had a friend in NZ who used to take that and make a stuffing and wrap the stuffing in beef then skewer it with a tooth pick and bake it - it was very good, can't rememer what it's called off the top of my head.

Yay for hellmans! I'm very much a mayo person, however - I have switched to Miracle Whip purely because the calories in MW are so much lower.

Handy hint: Never cook tomato based sauces while naked, as they splatter smile.gif

I LOVE LOVE LOVE the original Iron Chef. The theatrics will never be duplicated! The chicken battle with Chef Joel Robuchon was classic.
